Season pork chops on both sides with salt, pepper, paprika, and thyme.
Heat olive oil in a skillet over medium heat and lightly sear pork chops (2 minutes per side) for extra flavor. (Optional but recommended.)
Place sliced onions and garlic in the bottom of the slow cooker.
Lay pork chops on top and pour in the broth (and soy/Worcestershire sauce if using).
Cover and cook:
Low: 6β7 hours
High: 3β4 hours
