Ingredients
1 ½ cups all-purpose flour
1 cup rolled oats (old-fashioned oats)
½ cup granulated sugar
¼ cup packed light brown sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
⅛ teaspoon salt
1 large egg, lightly beaten
½ cup milk (any kind, dairy or non-dairy)
¼ cup vegetable oil or melted unsalted butter
1 teaspoon vanilla extract
1 ½ cups finely grated or finely diced apples (about 2 medium apples, such as Gala, Fuji, or Honeycrisp)
Instructions
Preheat your oven to 375°F (190°C). Grease and flour a 12-cup mini loaf pan or a 9×13 inch baking pan (for bars), or line with parchment paper. If using mini loaf silicone molds, greasing is usually sufficient.
In a large mixing bowl, whisk together the all-purpose flour, rolled oats, granulated sugar, light brown sugar, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Make sure there are no lumps and the dry ingredients are well combined.
In a separate medium bowl, whisk together the lightly beaten egg, milk, vegetable oil (or melted butter), and vanilla extract until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix; a few lumps are perfectly fine and will help keep the texture tender. Overmixing can lead to a tough final product.
Fold in the finely grated or finely diced apples. Distribute them evenly throughout the batter. The batter will be thick.
